The culinary teams from Min Jiang (Goodwood Park Hotel) and Min Jiang at One-North have introduced three new, raw fish-less Yusheng creations to tuck into this year. My personal pick is the Fruity Yusheng with Bacon & White Truffle Oil (Dine-in only at One-North outlet, $78 small, $128 large) crafted by Master Chef Goh Chee Kong.

It is a delectable teaming of vibrant colours and flavours of mango, rock melon, Japanese cucumber and strawberries with a generous portion of greens, layered with crisp bacon strips, deep-fried yam and potato slivers, then finished with a flourish of chef's own dressing sauce—a unique blend of plum sauce, mixed fruits and heady white truffle oil.

If you're looking for a noteworthy takeaway option, try the Crispy Salmon Skin Yusheng ($118 large) by Master Chef Chan Hwan Kee that's available for both dine-in and takeaway at Min Jiang.

The artful and well-executed plate of fresh, crunchy vegetables—sweet romaine hearts, yellow frisée, wild arugula, baby radish, purple cabbage and the likes—is enjoyed with a touch of traditional orange peel, jellyfish, crisp crunch of homemade fried salmon skin, and a mix of ground peanuts, sesame seeds and pine nuts for that added earthy fragrance and crunch.

The former features a whole spring chicken that's been flash-fried, then braised till perfection, with Australian 10-head abalones, dried oysters, dried scallops, flower mushrooms, white radish, black moss and gluten puffs stuffed with minced pork and prawn paste, while the latter consists of supremely tender pork spare ribs—first flash-fried, seasoned with garlic and spring onions, braised for two hours bone-in, then deboned and steamed for a further three hours—with Australian 8-head abalones, sea cucumber, dried oysters, dried scallops, flower mushrooms, black moss and Tianjin cabbage.
