This Chinese New Year, award-winning and Halal-certified buffet restaurant Carousel at Royal Plaza on Scotts presents a magnificent Mushrooms Mosaic Yusheng ($158 small, $188 large) for all to indulge.

Taking inspiration from 'monkey head' mushroom (Hericium mushrooms), Carousel’s rendition spotlights eight different varieties of mushrooms: crispy ‘monkey head’ mushroom, enoki mushroom tempura, porcini mushroom powder, braised Bai Lin mushrooms, dehydrated oyster mushrooms, button mushroom crisps, shiitake mushroom jelly and pickled black trumpet mushrooms.

It is then tossed with Hokkaido scallop sashimi and a spicy, seafood-based XO sauce for a delightfully textured experience that's umami, earthy, savoury and crisp all at once.
